My focus this year is self-care and to hold me accountable to keep on pursuing it, I’m hoping to do regular updates here to share how it’s going. I spent the majority of January sick with a never-ending cold, which really just proved to me how much I’ve been neglecting self-care. Jack and Brian didn’t even get sick, so it’s pretty clear whose immune system is the weakest around here! Other than resting to keep my cold from getting any worse, here are a few ways I’ve been practicing self-care over the past month:  Nutritious lunches Instead of my old staple of cheese and crackers, I’ve committed to eating more nutrient dense meals during the day. Lately that’s been HUGE salads (with nuts and fruit and avocado) or a hearty soup like lentil or vegetarian chili. Also, I’m getting better about taking my vitamins! Every year instead of a resolution, I like to pick a word or theme to focus on for the next 12 months. Last year it was minimalism, this year it was home and for 2017 it’s going to be self-care, which I’ll share more about today. One thing I love about picking a theme is that there is less pressure and more results.  Two years ago when I chose minimalism as my word, I would not have considered myself much of a minimalist—it was something I craved but hadn’t figured out. Now, it’s a concept that I live by and am constantly striving for more of. When I chose home as my word last year, I was craving more memories in our home, more family time together, and a place that felt less like a house and more like a, well, home. I loved that it was outside, required no equipment and was something I could do anywhere. After years of spending way too much time in the gym, it was also refreshing to do a workout that was equally nourishing for my soul and mind as it was for my body. Fast forward to age 29, nearly two years after having a baby, and I suddenly start getting sharp knee pain whenever I run. I took a few weeks off then went back out, and the same thing happened. As it turns out, I developed what’s called runner’s knee and I can’t seem to kick it. So for the whole summer (and now a couple months into fall), I’ve literally not exercised other than going for walks with Jack in the stroller and picking him up or chasing him around when I’m playing with him. And while I’m glad my knee doesn’t bother me with normal movement, I really have missed that high you get from a good workout. I first discovered Angela’s blog Oh She Glows years ago when Brian and I were eating vegan. She made our lives so much easier and I swear 90% of the meals we cooked were from her blog. That being said, today’s post isn’t just for non-meat eaters. It’s for anyone who likes sweet treats, specifically pumpkin cupcakes that can be made vegan, nut-free, or soy-free depending on your dietary needs. It’s also kid-friendly and freezer-friendly, and it’s a pumpkin cupcake with spiced buttercream frosting so that’s pretty much all I need to know. I was so worried it was going to taste awful, but I instantly loved it! It has a kind of tangy, fermented taste to it—if you like Kombucha, this is right up your alley. When I tell people this they often think I’m exaggerating, as my skin is the single physical feature I get complimented on regularly. But let me tell you, I’m telling the truth! I finally got around to going to the dermatologist and in addition to prescribing me an antibiotic cream to use on my back and parts of my face, she also recommended some dietary changes: no flour, no refined sugar, no dairy. To be fair I did prompt her by asking, “What non-medicinal things can I be doing to improve my acne and eczema.” And apparently, flour, sugar and dairy are basically the enemies of good skin. Which is a bummer, because they are the tastiest part of eating. Anyway, I’ve decided to take her advice and give it a try to see if it helps. While I love, love, love a good cheese plate and have a huge sweet tooth, I also really am not a fan of having breakouts all over my back and parts of my face, nor do I appreciate feeling itchy all the time.
