When people ask me what food I miss the most since going vegan, there is one thing that always comes to mind: soft serve ice cream. The summer after Brian and I got married, we used to make a habit of going for a walk and swinging by McDonald’s for a tasty vanilla cone. That’s why I was ecstatic when I discovered a vegan version of this delicious treat. Even better—it has only a few ingredients—none of which is sugar—and doesn’t require an ice cream maker!

Homemade Vegan Soft Serve
Recipe adapted from Chocolate Covered Katie
3 medium, really ripe bananas (sliced and frozen in a Ziploc bag ahead of time)
1 teaspoon pure vanilla extract
3 tablespoons unsweetened cocoa powder
1/16 teaspoon salt
Topping ideas: walnuts, almonds, crushed Oreo cookies, berries, chocolate chips
Once the bananas are frozen, combine bananas, cocoa powder, vanilla and salt in a food processor or blender (I use my Blendtec). You may need to add add 2-3 tsp milk of choice so it’ll blend more smoothly, and if your bananas are really frozen, you might also have to thaw them a tiny bit. Once it’s thoroughly blended and smooth, use a soft spatula to get all the goodness into your bowl or cone. Top with toppings of choice and enjoy!
>> Add 3-5 tbsp peanut butter or another nut butter of choice
>> Add 3 drops pure peppermint extract for a chocolatey, minty treat
