a very veggie thanksgiving

This year, Brian and I will be spending Thanksgiving with his side of the family in Ohio, where there is a chill in the air and a nice change of holiday snow! Though I won’t be in charge of the what’s put on the table this year, I thought it would be fun to share several vegan recipes with you in case you’re inspired to exchange your usual turkey for something different (or even just add something new to your meal!).

Here are some fun recipes found around the web for you to try this year…

Stuffed Acorn Squash with Quinoa and Herbs (I’ve made this several times—it’s a winner)

Four Ingredient Pumpkin Pie (made this last year and LOVED it!)

Have any recipes to add to the list?

I love this! I’m a vegetarian, so I always only eat sides, but this is very creative. Thanks for sharing!!
